Calum Franklin

Executive Head Chef

Drawing on a wealth of culinary experience, Calum has worked at a variety of renowned restaurants including; The Ivy, Aurora at the Andaz Hotel, Indigo at One Aldwych Hotel and was Senior Sous Chef at Roast in Borough Market, prior to heading up the kitchen at Holborn Dining Room.

Pamela Debattista

Restaurant Manager

We welcome Pamela to Holborn Dining Room as Restaurant Manager from The Ritz, one of London's most famous five-star hotels. Her expertise in luxury hospitality and events management makes her a fantastic addition to the team.

Cosimo Maldarella

Assistant Restaurant Manager

Cosimo started at Holborn Dining Room in 2017 as Floor Manager, before being promoted to Assistant Restaurant Manager in September 2018. His expertise comes from an eclectic mix of some of London’s best-known restaurants including; The Ivy, Berners Tavern by Jason Atherton and Koffman’s at The Berkley. Cosimo is passionate about service and loves being part of the buzzing environment of Holborn Dining Room.

Orlando Crocker

Assistant Restaurant Manager

Our Assistant Restaurant Manager Orlando joins us from an extensive restaurant background, featuring Notting Hill’s illustrious Casa Cruz and private members club, Century. In addition to his London experience, Orlando has also headed up multiple restaurants during his time in Montpellier, France, as Area Restaurant Manager. His expertise and charming charisma make him the perfect addition to Holborn Dining Room's energetic team.

Michael Raebel

Head Sommelier

Michael has been part of Rosewood London's team since the opening in 2013. Thanks to his passion for wines and sense of service he was rapidly promoted to Head Sommelier. Now in charge of the wine programme for the entire hotel, he happily shares his knowledge with the rest of the team and our guests.

Juan Pablo Dukart

Assistant Bar Manager

Juan joined the Holborn Dining Room team in December 2018 after more than two years as Assistant Bar Manager in Scarfes Bar. He has previously held several management positions in London and in Argentina, where he is originally from, and will use his worldly knowledge to lead The Gin Bar team.
