Drawing on a wealth of culinary experience, Calum has worked at a variety of renowned restaurants including; The Ivy, Aurora at the Andaz Hotel, Indigo at One Aldwych Hotel and was Senior Sous Chef at Roast in Borough Market, prior to heading up the kitchen at Holborn Dining Room.
Assistant Restaurant Manager
Cosimo started at Holborn Dining Room in 2017 as Floor Manager, before being promoted to Assistant Restaurant Manager in September 2018. His expertise comes from an eclectic mix of some of London’s best-known restaurants including; The Ivy, Berners Tavern by Jason Atherton and Koffman’s at The Berkley. Cosimo is passionate about service and loves being part of the buzzing environment of Holborn Dining Room.
